Torta
A little while ago I went to visit my friend Reina for her birthday party. After a fun day at the beach, in which we tackled the ocean and dried out on the sand, we flopped over to her apartment and relaxed among some tea and her cookbooks. While flipping through her Sephardi synagogue's cookbook, I came across a recipe for tortas that was strikingly similar to the tortas I grew up eating. They share similar ingredients: eggs, ground meat, onion, garlic, differing only in quantity and what starches and sauces they're served with. To make it vegetarian, the version below uses soy crumbles instead of ground beef. I like to add thyme, oregano, and tarragon in addition to salt and pepper to the egg mixture for an extra flair, and top it with a good-sized dollop of banana ketchup. Try it with curry powder, jerk seasoning, garam masala, or chili powder.If you're making it as a main course, consider using 2 eggs per person; otherwise, 1 egg per person will do. Adjust upwards if you're omitting the yolks. The following recipe serves 4 as a side dish and 2 as a full meal.Vegetarian Torta1/2 medium onion, diced
1-4 cloves garlic, minced
4 eggs
8 oz soy crumble, soyrizo, soyganiza, or other soy/gluten "meat", crumbled or diced into 1/4" cubes
1/2 cup milk, rice milk, or your favorite milk substitute
Herbs, seasonings, salt and pepper to taste
Oil for cooking1. Start cooking the rice, if you're serving it with rice. Continue while the rice is cooking.
2. Crack eggs into a bowl and beat gently. Add remaining ingredients and beat until mixed.
3. Heat a 10" or larger pan over medium to medium-high heat. Add oil.
4. When oil is hot, pour egg mixture into the pan 1/3 cup at a time, spacing each torta 1 inch apart.
5. Let cook until the bottom is golden brown and the bottom half is set, about 2 minutes. Flip the patties over and cook until the bottom is golden brown and the patty is set, about 1-2 minutes.
6. Serve hot with rice and Mafran or Jufran banana sauce. I especially like it with the spicy Jufran. Enjoy! Let me know how you eat your torta in the comments.
